Caramelised New Potatoes

- Cook the new potatoes in a saucepan of boiling water for 10 minutes or until almost tender. Drain thoroughly.
- Melt the sugar in a large, heavy-based frying pan (skillet) over a low heat, stirring.
- Add the butter and orange juice to the pan, stirring the mixture as the butter melts.
- Add the potatoes to the orange and butter mixture and continue to cook, turning the potatoes frequently until they are completely coated in the caramel.
- Sprinkle the chopped parsley or coriander (cilantro) over the potatoes and season to taste with salt and pepper.
- Transfer the caramelised new potatoes to a serving dish and garnish with the orange rind. Serve immediately.
