INGREDIENTS
675g/1½ lb new potatoes (Maris Peer), scrubbed.
4 tbsp soft dark brown sugar.
60g/2oz butter.
1 tbsp orange juice.
1 tbsp chopped fresh parsley or coriander (cilantro).
Salt and pepper
Orange rind curls, to garnish.

Caramelised New Potatoes

  1. Cook the new potatoes in a saucepan of boiling water for 10 minutes or until almost tender. Drain thoroughly.
  2. Melt the sugar in a large, heavy-based frying pan (skillet) over a low heat, stirring.
  3. Add the butter and orange juice to the pan, stirring the mixture as the butter melts.
  4. Add the potatoes to the orange and butter mixture and continue to cook, turning the potatoes frequently until they are completely coated in the caramel.
  5. Sprinkle the chopped parsley or coriander (cilantro) over the potatoes and season to taste with salt and pepper.
  6. Transfer the caramelised new potatoes to a serving dish and garnish with the orange rind. Serve immediately.

COOK'S TIP
Heat the sugar and butter gently, stirring constantly, to make sure that the mixture doesn't burn or stick to the bottom of the frying pan (skillet).
