Cheese and Potato Slices

- Cook the sliced potatoes in a saucepan of boiling water for 10-15 mins, or until the potatoes are just tender. Drain thoroughly.
- Mix the bread crumbs, cheese and chilli powder together in a bowl then transfer to a shallow dish. Pour the beaten eggs into a separate shallow dish.
- Dip the slices in egg and then roll them in the bread crumbs to coat.
- Heat the oil in a large saucepan or deep fat fryer to l80-l90°C/350-375°F, or until a cube of bread browns in 30 secs. Cook the slices in several batches, for 4-5 mins. or until a golden brown colour.
- Remove the cheese and potato slices with a perforated spoon and leave to drain thoroughly on paper towels. Keep the slices warm while you cook the remaining batches.
- Transfer the slices to warm serving plates. Dust with chilli powder, and serve immediately.
