INGREDIENTS
3 large waxy potatoes, un-peeled and thickly sliced (Piper work best).
16 tbsp fresh white bread crumbs.
8 tbsp grated Parmesan cheese.
1½ tsp chilli powder
2 eggs, beaten.
Oil, for deep frying.
Chilli powder for dusting (optional).

Cheese and Potato Slices

  1. Cook the sliced potatoes in a saucepan of boiling water for 10-15 mins, or until the potatoes are just tender. Drain thoroughly.
  2. Mix the bread crumbs, cheese and chilli powder together in a bowl then transfer to a shallow dish. Pour the beaten eggs into a separate shallow dish.
  3. Dip the slices in egg and then roll them in the bread crumbs to coat.
  4. Heat the oil in a large saucepan or deep fat fryer to l80-l90°C/350-375°F, or until a cube of bread browns in 30 secs. Cook the slices in several batches, for 4-5 mins. or until a golden brown colour.
  5. Remove the cheese and potato slices with a perforated spoon and leave to drain thoroughly on paper towels. Keep the slices warm while you cook the remaining batches.
  6. Transfer the slices to warm serving plates. Dust with chilli powder, and serve immediately.

COOK'S TIP
The slices may be coated in the bread crumb mixture in advance and then stored in the refrigerator until ready to use.
